A Few More Ideas

🌶️ Want more heat? Leave some jalapeño seeds and membranes in the peppers.

🍽️ Serve them up. Enjoy hot, straight from the grill—no sides required.

Let's Get Cooking!

1
Prep the peppers.

Cut both ends off each jalapeño, then slice it in half lengthwise. Remove the seeds and membranes for milder heat, or leave some in if you like it bold.

Prep the peppers.
2
Season the sausage.

Spread the breakfast sausage onto a flat pan. Mix the breadcrumbs with 2 tablespoons of Classic Dust, sprinkle over the sausage, and knead until evenly combined.

Season the sausage.
3
Mix the filling.

Combine the softened cream cheese, Parmesan cheese, and remaining 1 tablespoon of Classic Dust. Mix thoroughly.

Mix the filling.
4
Stuff and reassemble.

Fill both halves of each jalapeño generously with the cream cheese mixture, then put the halves back together to recreate the whole pepper.

Stuff and reassemble.
5
Wrap your Gator Eggs.

Cover each stuffed pepper completely with seasoned sausage, then roll it between your hands into a smooth egg shape.

6
Fire up the grill.

Preheat your grill. For a pellet grill, set it to 350°F.

7
Brown all sides.

Grill the Gator Eggs, turning regularly until browned all around, approximately 15–20 minutes.

Brown all sides.
8
Sauce and finish.

Baste with your favorite SMH Grill Sauce. Continue turning and cooking approximately 5–10 minutes longer, until the center of the sausage reaches 160°F. Cooking time varies by grill and sausage thickness.
